Traditional pastry can be found all over the country. Southerners call it "southern-style Fanmao Pastry". People in Guanzhong, Shaanxi call it "crystal cake", while people in Ruicheng County call it "Fanmao Pastry" and people in the royal palace call it "morning snack". Local People here in Fenglingdu call it "Dim Sum". According to research, Fenglingdu dim sum has a history of thousands of years and is a local specialty with strong flavor. Fenglingdu dim sum is made in a very sophisticated way. It is mixed with the lard, water, sugar, sesame as its stuffing and is baked in the stove. The outer skin has layer upon layer of pastry with long sweet taste. For hundreds of years, dim sum has been a must-have gift for locals to give to relatives and friends during the holidays and festivals. In those days, the G8 coalition forces invaded Beijing, Empress Dowager Cixi fled to Xi 'an. On the way, she passed a food workshop in Fenglingdu. When the shopkeeper saw the royal chariot and horse team, he did not dare to neglect but immediately brought a plate of hot Fanmao pastry (people around Fenglingdu and RuiCheng called the dim sum "Fanmao Pastry" at that time) to Cixi. He said "It’s my pleasure to serve you. Please enjoy it." Cixi did not hear clearly, then asked loudly, "what is this?". The shopkeeper was frightened into silence. At that time, the eunuch serving Cixi heard clearly the word "dim sum" said by the shopkeeper. As the shopkeeper spoke in a relatively small voice, even the eunuch did not hear clearly. So the eunuch missed two middle words of the shopkeeper negligently but left the first and last words so as to make it sound like “dim sum”. When the eunuch saw the shopkeeper's silence, he immediately said to Cixi, "this is dim sum. Please enjoy it." Because she is quite hungry, Cixi was very happy to eat this pleasing dim sum. She praise the food by immediately writing down  "Dim Sum Shop" and a couplet: "a bit of sincerity is plain like water; super business stable as mountains"to express her praise to the shopkeeper. The shopkeeper was very happy, so he changed the sign for "Dim Sum Shop". So dim sum became a common term for Fenglingdu and imperial pastry. The "Dongfeng Ren" pastry made by Dongfeng Food Factory with the combination of traditional technology and modern production technology has won the gold awards of "Shanxi Provincial Food Expo" and "Yuncheng Industrial Products Expo", and received a good response from the society.
